First Communion Cupcakes

I was asked to make cupcakes for my Godson’s First Communion about two weeks ago. I looked everywhere for sugared bibles, hands, crosses, or pieces of communion. I ended up having to make my own with those candy pieces you can melt. Luckily, AC Moore had the molds. I do not do well with these things. I tried to make homemade candy for the Halloween cupcakes back in October and failed spectacularly. These turned out much better though.

My Godson’s birthday is December 1st and he’s young, so he wanted Christmas themed cupcakes to bring into school. These were supposed to be red and green themed, with the red icing and green sprinkles. I ended up running out of red food coloring, and the green sprinkles I had on hand were more neon green than Christmas green.  These ended up looking like a teen girl’s 13th birthday neon theme cupcake, but 8 year old kids don’t care.

Everyone’s Favorite Thanksgiving Cupcake..

My mom is a big fan of two things: filled cupcakes and apple pie. Everytime I said I was going to make cupcakes she’d ask if I was going to fill them and if I was if I could fill them with apple pie filling. So I made a basic vanilla cake and added cinnamon. I filled the cups up slightly so that the bottom was completely covered and then added the apple pie filling. I cut the apple pie filling into very small pieces since the pieces were too big to fit in a cupcake. Then I added more of the cake batter. Once they were cool I added the maple buttercream in a lattice work, much like the top of a pie. These were a hit. Of course, my mom said they were too sweet, but that didn’t stop anyone from eating them. They went the fastest, and I was even asked to make a dozen for a Christmas party.

More Thanksgiving Cupcakes..

Some people aren’t fans of chocolate cream cheese icing, but I LOVE it. I made these before in mini form, but decided to make them full size for a huge family Thanksgiving get together. They were the second favorite among the three I made. Number 1 is next…

Thanksgiving Cupcakes

Better late than never! These are just a simple vanilla cake with a cranberry buttercream. I added the cranberry juice to sugar on top of the stove so that it was almost carmelized and then added it slowly to the buttercream. I did not add milk, I used this as the liquid instead. I did keep the vanilla and I ended up adding way more butter and powdered sugar than normal because the cranberry was just too tart.

Halloween Cupcakes (Part 1)

I threw my little cousin a Halloween party in October and planned elaborate dessert decorations. Of course, I became extremely sick the week before the party. All my edible decorations: cupcake graveyard, brownie spiders, pumpkin cake pops went out the window.

Just as I was recovering towards the end of the week and the day before the party our oven element broke in half. I was devastated. Instead of giving up and just buying a store bought cake (yuck) I called around and ordered four dozen un-iced cupcakes. Of course my black velvets would have to wait until another time as they would only give me vanilla and chocolate.  

Anyway, these are the results of my last minute icing extravaganza. I had made some chocolate pieces the night before just so I had some extra things to decorate with.

Chocolate Pumpkin Minis

These were the winners. I finally got the right mix of chocolate to cream cheese icing so that the chocolate wasn’t overpowering and you were left with a cream cheese taste in stead of being overwhelmed by chocolate.

Pumpkin Cupcake Minis

I live for fall. I live for Halloween. I live for anything pumpkin related. So I, of course, at the first hint of Autumn made pumpkin cupcakes with cream cheese icing. Just added pumpkin puree to a vanilla cake with some extra brown sugar and some nutmeg and cinnamon and I was good to go. These were very good, not to brag.
